Cookie bars are basically just cookie dough baked in a dish like brownies and then cut into bars. Basically cookies in bar form, so no extra step of rolling each cookie out. They are fun and tasty and an extra step easier than traditional cookies.
These Sugar Cookie Bars are soft, chewy and so yum. They are a soft sugar cookie bottom with a buttercream frosting on top. I added one drop of yellow food dye to the frosting to give it a fun pastel spring color. I also topped them off with crushed easter egg candy. You could also use Easter or Spring sprinkles too and that would be adorable.

These Easter Sugar Cookie Bars are the perfect sweet treat to add to your Easter spread and since they are in bar form they are easy to bring to a get together, plus there’s enough to go around!! These would be such a crowd pleaser!!
These would also be so fun to make for other holidays by adjusting the icing color and sprinkles. They are such a cute and fun recipe to make. God so loved us all that He sent His one and only son that whosoever believes in Him will not perish but have everlasting life. Growing up, we would always have Easter egg hunts and do something fun for Easter as a family. I love any opportunity to celebrate, be with family and gather. AND of course baking for family gatherings is a must. That’s why I love creating fun recipes for each holiday!!

I love how simple these sugar cookie bars are to make. They are made up of only 2 components. The bottom layer is a sugar cookie base and the top layer, a delicious creamy buttercream frosting.
For the bottom layer, you make a simple sugar cookie dough, press it down evenly in a baking dish and bake. Once cooled, you add your buttercream frosting and smooth out evenly. Then top with sprinkles or whatever you decide to top them with.

What You’ll Need:
- butter (unsalted)
- sugar
- brown sugar
- vanilla extract
- eggs
- flour (all purpose)
- cornstarch
- baking soda
- salt
- powdered sugar
- heavy whipping cream
- vanilla extract
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.

Easter Sugar Cookie Bars
Ingredients
- 1/2 cup butter 1 stick softened unsalted
- 1/2 cup sugar
- 1/8 cup brown sugar about 2 tbsp
- 1 tsp vanilla extract
- 1 egg
- 1 1/4 cup flour all purpose
- 1/2 tbsp cornstarch
- 1/2 tsp baking soda
- 1/4 tsp salt
For Frosting:
- 1/2 cup butter 1 stick, softened, unsalted
- 2 1/2 cups powdered sugar
- 2-3 tbsp Heavy Whipping Cream
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F and line your baking pan with parchment paper.
- In a large mixing bowl cream your butter, sugar and brown sugar until light and fluffy.
- Add your vanilla extract and egg, and stir until well combined.
- Add your flour, cornstarch, baking soda, and salt. Stir until just combined.
- Scoop your cookie dough into your lined baking dish and press down until it’s even using your hand or a spatula.
- Bake in the oven at 350 F for 8-10 minutes until edges start to brown.
- Remove from oven and let cool.
- In a bowl of a mixer add your butter, and whip up until fluffy. Add you powdered sugar, heavy cream, and vanilla and whip until well combined and smooth. (If your frosting is too thin, add a little more powdered sugar and if it’s too thick add a little more.
- Top with buttercream frosting and spread evenly. Top with crushed Easter candy or spring colored sprinkles.
- Cut into bars!! Serve, share & Enjoy!!
