These Dark Chocolate Coconut Almond Cookies are soft, chewy and the perfect flavor combination. Dark chocolate, almonds and toasted coconut go so well together and I love how well they pair.
They give Almond Joy vibes and you could even do milk chocolate instead of dark chocolate to do an Almond Joy inspired cookie. Whatever chocolate you like best would be so good in these cookies.

IT’S THAT TIME OF YEAR AGAIN. Welcome back to my annual 12 days of Christmas Cookies series!! I am soooo pumped that you are here. I can’t wait for you to try out the fun and festive cookie recipes I share this year. EEEEE, I hope you are as excited as I am.
Every year I do a cookie series called my 12 days of Christmas Cookie Series where I create 12 different cookie recipes you can make for Christmas. It’s such a fun way to celebrate the season and get into the spirit of Christmas. AND who doesn’t love cookies?

I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.
What You’ll Need:
- butter
- brown sugar
- sugar
- eggs
- vanilla bean paste or extract
- all purpose flour
- cornstarch
- baking soda
- salt
- dark chocolate
- toasted coconut
- chopped almonds
- flaky sea salt
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.


One of my favorite parts about doing this series is getting to see you make them and enjoy them with your loved ones. It’s so special to hear and be a part of. To get my cookies to be super round and all the same shape, I like using a round glass, a biscuit cutter or cookie cutter to the lid of a mason jar!! It’s definitely not required but just a fun little tip, I like to use. I’ll share a link HERE to some on amazon if you’d like to try out this simple yet effective baking hack.

Dark Chocolate Coconut Almond Cookies
Ingredients
Method
- Preheat oven to 350°F and line your baking sheets with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it’s melted, keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns a amber brown color. Transfer into a glass measuring cup and let cool.
- In a large bowl add your browned butter, brown sugar, and sugar. Whisk it up until it’s well combined.
- Add your eggs and vanilla bean paste (or vanilla extract) and stir again.
- Your mixture should be light and fluffy in texture.
- Next, add your dry ingredients. This includes your all purpose flour, cornstarch, baking soda and salt. Stir until just combined.
- Add your chopped dark chocolate, toasted coconut flakes, chopped almonds (make sure to reserve some for tops). Stir them in until just combined.
- Scoop your cookie dough into 1-2 inch balls and place on your baking sheets lined with parchment paper a few inches apart (to prevent some spreading into each other). Top with extra chocolate.
- Bake at 350°F for 8-10 minutes, until edges are golden brown. If you want soft and gooey cookies be sure to take them out before fully set, they will continue to cook slightly on the pan.
- Remove from oven. Using a round cookie cutter or glass, scoot around your cookies to make them all round and the same size. This also helps if they spread too much.
- Add a pinch of flaky sea salt and let cool.
- Share and enjoy!!
