Churros are one of those desserts that just hit different. They are soft and chewy yet crispy. I thought it would be SO FUN to make a cookie inspired by churros and here we are. I love making cookie recipes inspired by other desserts.
The texture of these churro cookies are soft and chewy, and have the perfect bite. You can serve them warm or chilled and they will taste incredible. The flavor is comforting and sweet and have the perfect amount of cinnamon.

Cookie recipes are DEFINITELY one of my absolute favorite desserts to make!! One, they are taste amazing. Two, they are SO easy and quick to make. (Especially compared to some other desserts.) Three, they are very versatile which I love. The possibility for cookie recipes are endless.
These churro cookies are honestly so fun to make and super easy as well!! Even a beginner baker can whip these up. If you want an easy but delicious recipe to make these are the perfect cookie for you. If you are a fan of cinnamon and warm flavors, then you will love these cookies.


These cookies would be perfect for a Mexican holiday or themed party. Cinco de Mayo or a Spanish themed party. OR for anyone who loves cinnamon or churros. They are also such an amazing recipe for the holidays because the flavors are very warm and cozy with all the cinnamon, brown butter and cream cheese. They’d be so good for fall, Thanksgiving or Christmas time. I love baking around the holidays and these cookies would be a big hit.

What is Brown Butter & How Do You Make It?
Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it it’s delicious deep nutty flavor. It takes a few quick minutes on the stove and the smell is like no other. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back once you make it a few times and super simple to make so the extra step is optional but 100% worth it.
You can still make this recipe without using brown butter it just won’t have the nutty flavor but will still be delicious. If you also want the texture to be the same, I would use melted butter because the consistency of brown butter and melted will be the most similar.

What You’ll Need:
- butter
- brown sugar
- sugar
- vanilla extract
- eggs
- all purpose flour
- cinnamon
- cornstarch
- baking soda
- salt
- cream cheese
- powdered sugar
- heavy cream
- parchment paper
All the ingredients in this recipes are so easy to find at your local grocery store or already in your kitchen. They are simple ingredients but make for the most perfect sweet dessert.


Let’s Get Started:

Churro Cookies
Ingredients
For Cookies:
- 1 cup butter 2 sticks unsalted, browned
- 1 cup brown sugar
- ½ cup sugar + ½ cup for rolling
- 1 tsp vanilla extract
- 2 eggs
- 2 2/3 cups flour
- 2 tsp cinnamon + 1 tbsp for rolling
- 1 tbsp cornstarch
- 2 tsp baking soda
- 3/4 tsp salt
For Frosting:
- 8 oz cream cheese 1 block
- 1/2 cup butter 1 stick
- 4-5 cups powdered sugar
- 1/4 cup heavy cream
- pinch of salt
- 1 tsp vanilla
Instructions
For Cookies:
- Preheat oven to 350℉ and line your baking sheets with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it’s melted, keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns a amber brown color. Transfer into a glass measuring cup and let cool.
- In a large bowl, add your cooled browned butter, brown sugar, and sugar and stir until well combined. Add your eggs, vanilla extract, and stir until light and fluffy.
- Once your wet ingredients are combined, add your flour, cinnamon, cornstarch, baking soda and salt and fold together until just combined.
- Scoop your cookie dough into 1-2 inch balls, roll them in your remaining ½ cup of sugar and 1 tbsp of cinnamon and place them on your baking sheets lined with parchment paper.
- Bake in the oven at 350º for 8 minutes until baked.
For Frosting:
- Whip together your butter and cream cheese until well combined and fluffy.
- Add your heavy cream, vanilla, and powdered sugar and whip until it comes together.
Assemble:
- Once your cookies have cooled completely, add a dollop of frosting on easy cookie and spread it evenly and swirl from the edge going in. Top with a generous sprinkle of cinnamon sugar.
- Share and enjoy!!
