It’s day 7 of my 12 days of Christmas cookie series!! I am so excited to be doing this series. I absolutely love baking Christmas Cookies so this series is my absolute favorite. Last year was my first time doing this series and I’m so happy to be doing it again this year!!

So far this year I have done, Oatmeal Chocolate Chip Cookies, Peanut Butter Chocolate Marbled Cookies, Cranberry Orange Muffin Top Cookies, White Chocolate Coconut Macadamia Nut Cookies, Marbled Christmas Sugar Cookies, and Salted Caramel Cookies!! They are all so yum!! This Christmas Cookie series is one of my favorite things to share.


Christmas is my absolute favorite time to bake. There is just something so special about baking at Christmas time. It’s eventful and nostalgic and so so fun. I love that I get to bake for family and friends around the holidays. Plus sharing recipes around this time of year is the best. If you’re looking for a recipe to impress your family, they will LOVE these.

What You’ll Need:
- unsalted butter
- brown sugar
- sugar
- eggs
- vanilla extract
- vanilla bean paste
- cornstarch
- baking soda
- salt
- cocoa powder
- flour
- powdered sugar
- parchment paper
I like sharing a list of the ingredients so you can see ahead of time, everything you’ll need to make these. All the ingredients for these cookies are so simple but make SUCH yummy cookies. They are easy to find whether that’s already in your pantry or at your nearby grocery store.



These cookies are soft, thin, chewy and have crispy edges. They are the perfect chocolate crinkle Christmas cookie. If you like soft & chewy cookies OR if you like thin & crispy cookies than these are for you. They truly are the best of both worlds.

Let’s Get Started:

Chocolate Crinkle Cookies
Ingredients
- 1 cup butter 2 sticks, unsalted, softened
- 1 cup brown sugar
- 1/2 cup + 1/3 cup sugar separated
- 1 egg + 1 egg yolk
- 1 tsp vanilla extract
- 1 tsp vanilla bean paste
- 1 tbsp cornstarch
- 2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup cocoa powder
- 2 1/2 cups flour all purpose
- 1/3 cup powdered sugar for rolling
Instructions
- Pre-heat oven to 350℉ and line your baking sheets with parchment paper.
- In a large bowl, add your softened butter, brown sugar and first part of your sugar and mix until combined. (reserve rest of your sugar for rolling)
- Add egg, egg yolk, vanilla extract and vanilla bean paste. Mix until well combined and light and fluffy.
- Add flour, cornstarch, cocoa powder, salt and baking soda and fold until just combined.
- Scoop out your cookie dough into 1 inch balls. Roll in sugar and then roll in powdered sugar. This helps give the crackling effect.
- Bake in a 350° oven for 10-12 minutes. Remove from oven, let cool and enjoy!!
- For a puffier cookie, add 1/4 cup more of flour or chill your dough before baking.
