Chocolate Cake with Chocolate Frosting
Ingredients
Method
- Preheat your oven to 350° F. Butter and line 3 cake pans (8 or 9 inch) with parchment paper.
- In a large bowl, add your sugar, flour, baking soda, baking powder, cornstarch, salt and cocoa powder. Whisk until well combined.
- Create a well in the middle of your dry ingredients and add your wet.
- Add your sour cream, vanilla extract, eggs, oil and whole milk. (Make sure your dry ingredients are at room temp before mixing together to ensure a good texture for your cake)
- Whisk together until JUST comes together and is combined.
- Pour evenly into your greased cake pans and bake in the oven at 350° F for 20-25 minutes until a butter knife comes out clean.
- Let cool for 10-15 minutes then using a butter knife slide it around the cakes edges to help it release from the pan. Flip your cakes onto a cooling rack and let finish cooling.
- In a large bowl of a mixer, add your softened butter and mix on high speed for a few minutes until light and fluffy.
- Add your vanilla and salt and mix again.
- Slowly add your powdered sugar, one cup at a time. Mix until all incorporated. Add your Cocoa powder
- Add your heavy cream and mix until light and fluffy and reaches the desired texture.
- I also like using homemade chocolate ganache to give the frosting a rich chocolate flavor. Do this by adding equal parts chocolate chips and heavy whipping cream into a glass measuring cup or bowl and heating for 1 minute in the microwave. Let set for a few minutes, mix until smooth and slowing add it to your frosting.
- On a cake stand or plate add a small bit of your chocolate frosting. Add your first chocolate cake layer and top with some more frosting. Spread it out until smooth.
- Add your next cake layer and repeat, adding more of your chocolate buttercream.
- Place your last cake layer on top and add more frosting. Layer on your chocolate frosting using an offset spatula until the cake is covered. Use the back of your spatula to swirl the frosting in small round circular patterns. Decorate how desired.
- Cut, serve, share and enjoy!!
