Carrot cake is one of my absolute fav cake flavors!! AND cookies are one of my favorite desserts. I love taking two of my favorite things and putting them together. So this dessert is SO YUM. I love how easy these are to make. They taste just like carrot cake but in cookie form.
The texture for these carrot cake cookies are soft, chewy, fluffy and SO flavorful. The cream cheese frosting top these off perfectly. You can even add chopped toasted walnuts or pecans on top as well for an extra crunch. SO GOOD!!

All the ingredients in this recipe are easy to find. Simple ingredients but put together, make for the best flavors. All these ingredients can be found at your local grocery store and vanilla bean paste can be found online or at a speciality food store. Most of these ingredients are probably already in your kitchen at home. I’m so excited for you all to try these.
Easter is one of my favorite holidays. I love celebrating the resurrection of my savior Jesus, not only on Easter but everyday. God so loved us all that He sent His one and only son that whosoever believes in Him will not perish but have everlasting life. These carrot cake cookies are SO delicious. They are soft, chewy, perfectly spiced and perfectly sweet. If you like carrot cake then you will absolutely love these cookies. The cream cheese frosting swirl top these off perfectly. OH and you can add toasted walnuts or pecans to take these to another level.
These cookies are super good slightly warm with that swirl of frosting and especially with a glass of milk. The texture reminds me of carrot cake. Soft and tender. I also love these cookies chilled. the textures blend together for a perfect bite.

Carrot Cake Cookies
Ingredients
For Cookies:
- 1 cup butter browned
- 1 cup brown sugar
- 1/2 cup sugar
- 1 egg + 1 egg yolk
- 1 tsp vanilla bean paste
- 1 cup shredded carrots patted dry
- 2 1/2 cups flour
- 2 tsp cinnamon
- 1 tbsp cornstarch
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup walnuts toasted, chopped
For Cream Cheese Frosting:
- 8 oz cream cheese 1 block
- 1/2 cup butter 1 stick
- 1 tbsp vanilla extract
- 1/4 cup heavy whipping cream
- 5-6 cups powdered sugar
Instructions
For Cookies:
- Pre-heat your oven to 350° and line your baking sheets with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it’s melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.
- In a large bowl add your brown butter, brown sugar, and sugar and stir until combined.
- Add your egg, egg yolk, vanilla bean paste and stir until fluffy in consistency and well combined.
- Shred your carrots and pat them dry. I used a paper towel to squeeze all the liquid out.
- Add them into your wet ingredients and stir until evenly distributed.
- Next, add your flour, cinnamon, baking soda, salt and cornstarch into your bowl and fold them in, until combined.
- Scoop out your cookie dough into 1-2 inch balls and place on your baking sheet lined with parchment paper a couple inches apart to prevent from spreading into each other.
- Bake at 350° for 8-10 minutes until baked. remove from oven and let cool.
For Frosting:
- In a large bowl, beat together your butter and cream cheese until well combined and fluffy.
- Add your powdered sugar, one cup at a time. If your mixture gets too thick add your heavy whipping cream and vanilla extract.
- Continue to mix and add the rest of your powdered sugar. You can add a pinch of cinnamon if you'd like.
- Once your cookies have cooled, add a swirl of your frosting and top with your toasted chopped walnuts (optional).
- Continue with the rest of your cookies.
- Serve, share & ENJOY!!!
