August has arrived so ALL the fall bakes are trickling in. Autumn is one of my absolute fav times to bake. All the flavors and scents of fall are so warm and cozy and so fun to bake with. Th BER months are coming soon so I’m SO excited to share ALL the fall recipes.
Baking during fall months is literally the best. I remember when I lived in Ohio I would crave fall so much and get soooo excited when the weather started cooling down and the leaves starting changing. Ohio has such beautiful autumns. Now that I live in Florida, I get excited just without the drastic weather changes haha.
These Brown Sugar Cinnamon Poptarts are soft, flaky and full of flavor and the most perfect dessert to make during fall. The filling is so yum and gives that cozy fall flavor while the pie crust is flaky and the glaze finishes them off perfectly.
I am SO excited for you guys to try these out!! Brown Sugar and Cinnamon is one of the best fall flavor combos that everyone will love. PLUS making homemade pop tarts is seriously so cute and fun!!
I know when fall roles around and all the recipes come out a lot of them are pumpkin. AND although I loveee pumpkin, it’s not everyones thing so I’m happy to share some recipes that are still all things fall but not only pumpkin.

I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.
What You’ll Need:
- flour
- butter
- sugar
- salt
- vinegar
- ice water
- brown sugar
- cinnamon
- eggs
- heavy cream
- powdered sugar
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun cookie and I’m so excited for you to try them out.
These Homemade Brown Sugar Cinnamon Poptarts make up of a few components but they are all pretty simple. The pie crust, the filling and then of course the glaze on top. They are also brushed with an egg wash before baking to give them a golden brown finish. Down below in the directions there are step by step instructions for each components.
To avoid the filling from oozing out the sides while baking, be sure to seal the sides with water and crimp them with a fork, chill them for about 15 minutes and then brush with egg wash before baking.
Let’s Get Started!!
Brown Sugar Cinnamon Poptarts
Ingredients
- 2 cups flour
- 1 cup cold butter cubed
- 2 tbsp sugar
- 1/2 tsp salt
- 1 tsp vinegar
- 5-8 tbsp ice water
- + flour for rolling
Filling:
- 1/2 cup butter
- 1 cup brown sugar
- 2 tbsp cinnamon
- 2 tbsp flour
Egg wash:
- 1 egg
- 1 tbsp cream
Glaze:
- 1 cup powdered sugar
- 2-5 tbsp heavy cream
- 1/2 tsp cinnamon
Instructions
For Pie Crust:
- In a large bowl add your flour, sugar, salt, & cold cubed butter and using a pastry cutter or fork, combine it together. It will take a bit of mixing before it comes together. You can also use your hands to help break up butter.
- Once your mixture is combined and crumbly, add your vinegar and then your ice water 2 tbsps at a time mixing in between each one.
- When your dough comes together, form it into a disk and wrap in plastic wrap to chill for 30 minutes.
For Filling:
- Preheat oven to 375° F and line your baking sheets with parchment paper.
- In a small bowl, add your butter, brown sugar, flour and cinnamon and stir until well combined.
- On a floured surface with a rolling pin, roll out your pie dough until ¼ inch thick. Cut into squares or rectangles.
- Place one of your dough squares onto a baking sheet lined with parchment paper and fill with a spoonful of your filling.
- Brush the edges with water and add another dough square on top. Continue with the rest.
- Using a fork, crimp the edges of each poptart and then poke four holes into the middle of each poptart.
- Chill your unbaked poptarts in freezer for 15 minutes.
For Egg wash:
- In a small bowl add your egg and heavy whipping cream and whisk together until well combined.
- Using a pastry brush, brush egg wash over your poptarts and place in the oven at 375° F until golden brown. Remove from oven.
For Glaze:
- In a bowl add your powdered sugar, heavy whipping cream and cinnamon and whisk until well combined.
- If glaze is too thick add more cream or a tsp of water. If it’s too thin, add more powdered sugar.
- Once your poptarts have cooled, use a spoon to spread the glaze over your poptarts.
