Brown Sugar and Cinnamon together is one of my favorite fall flavor combinations to use in my fall recipes. It’s warm and cozy and gives all the fall flavor vibes. The warmth of the brown sugar and the spice of the cinnamon makes this recipe feel like a warm hug on a crisp autumn day.
These Brown Sugar Cinnamon Poptart Cookies are soft and flavorful. It’s like the nostalgic brown sugar cinnamon pop tarts but in cookie form. This recipe is made up of only a handful of ingredients but make for the most delicious from scratch and chewy flavorful cookie. They’re so buttery and warm overall making them a perfect homemade fall cookie recipe.

To Make Them:
This fall recipe is an easy dessert, but still very beginner friendly. It’s made up of three different components: The shortbread cookie, the cinnamon brown sugar buttery filling and the cinnamon glaze on top. It’s one of my favorite fall cookie recipes. These would be perfect to make for your fall party and thanksgiving dessert.
The shortbread cookies are made with 5 ingredients: butter, sugar, salt, vanilla and flour. It’s a SUPER simple dough therefore very easy to make. Regardless, the flavor is still significantly wonderful. They’re buttery and have a hint of vanilla. Be sure to use the highest quality ingredients you can, because that will definitely shine through in this recipe.


The filling for these cookies is undeniably what makes them so perfect for fall. It is made with brown sugar, cinnamon and butter. All you do is mix it all up until a paste like consistency forms and then you are all set and ready to fill your cookies before baking.
The glaze, which is also just a handful of ingredients, is made up of a dash of milk, powdered sugar and a sprinkle of cinnamon. It tops these Brown Sugar Cinnamon Pop Tart Cookies so perfectly. I also love to add a sprinkle of cinnamon on top of these cookies, as well.

Fall baking is one of my favorite things ever. Just the fact that we have the ability to make our homes smell like Cinnabon is just the best thing ever. Every season has something special about it. For Autumn, the comforting cozy feelings it gives is one quality I appreciate most.

What You’ll Need:
- butter
- sugar
- salt
- vanilla extract
- flour (all purpose)
- brown sugar
- cinnamon
- milk
- powdered sugar
- parchment paper
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.

Brown Sugar Cinnamon Poptart Cookies
Ingredients
Method
- Line your baking sheets with parchment paper and pre-heat your oven to 350°F.
- In a large bowl add your softened butter, sugar and vanilla and mix until combined.
- Add your salt and flour. Stir until it comes together and the dough forms.
- To make the filling, add your brown sugar, cinnamon and softened butter and mix until it’s well combined.
- Scoop out a small piece of your shortbread cookie dough and place on your baking sheet lined with parchment paper, slightly flattening it. Add a small spoonful of the cinnamon brown sugar mixture and then top with another small piece of shortbread cookie dough, making sure the edges of the dough connect, forming your poptart cookie.
- Continue with the rest of your cookie dough and cinnamon brown sugar mixture.
- Bake at 350°F for 8-10 minutes. Remove from oven and let cool.
- To make the glaze, add your milk, powdered sugar and cinnamon into a large measuring cup and mix until your glaze forms. If your glaze is too thin, add more powdered sugar or if it’s too thick, add a little bit of milk at a time, until you reach your desired consistency.
- Add a small spoonful of your glaze onto each cookie and sprinkle with a dash of cinnamon.
