I’m so excited to be sharing a fall flavor in my no bake cheesecake bar series. These apple crisp cheesecake bars are FOUR layers and they are so good. The cheesecake layer has NO EGGS which makes it no bake cheesecake although the crisp layer on top is baked and put on top for a nice crunch.

The first layer is the CRUST. In this recipe I do a graham cracker crust that only consists of 3 ingredients. Crushed graham crackers, brown sugar, and melted butter. You stir them together and press them into your baking dish lined with parchment paper.
The second layer is the creamy no bake cheesecake part. To make it, you combine cream cheese, brown sugar, vanilla extract, and salt and whipped up heavy cream is folded in at the end. You then spread the cheesecake mixture over the crust and spread it out evenly. Be sure to chill in between each layer.
The next layer is the apple layer. This layer consists of a soft warm apple mixture that is made with cinnamon and lemon juice. You cook the apples on the stove and once they are soft and all the ingredients have formed into gooey apple goodness, you remove them from the heat to let cool and then spread over the cheesecake layer.
The final layer is the “crisp” part of the cheesecake. It’s the delicious oat brown sugar buttery mixture you top cobbler with. SO YUM. This is the part that does require a little bit of baking cause you do not want to put raw butter and flour on top of your bars. I baked the mixture and broke them into little crispy pieces to add on top of the apple mixture. You can totally make these no bake cheesecake bars without this layer if you don’t desire the crisp part but it definitely adds nice crunch.

One of my favorite things about the holidays and this time of year is how it brings people together. Families gather, couples host, adults and kids alike get so excited for the cozy season. It’s just so full of joy and fun. I have a big family that continues to grow so some of my favorite memories are the traditions we started when I was a kid and now can continue as our family grows.
The flavors of fall are just so warm and cozy, I love it. Pumpkin and spices, warm apples and cinnamon, fresh maple. Baking in the fall is just so fun and special and cozy.
What You’ll Need:
- cream cheese
- heavy whipping cream
- vanilla extract
- salt
- brown sugar
- butter
- graham crackers
- apples (honey crisp)
- lemon juice
- corn starch
- sugar
- cinnamon
- flour
- oats
The ingredients in this recipe are all easy to find at your local grocery store or are already in your pantry. For these apple crisp cheesecake bars I used honey crisp apples that were peeled and chopped but you can use whatever apple you like best. I know granny smith apples are very popular to use in apple crisps so those could work as well.
Cheesecake is such a good dessert. I love making no-bake cheesecake bars cause it’s just so quick and easy to make and a perfect dessert for a party, birthday, holiday or event. Whether you’re hosting and make these or going somewhere these are the perfect holiday party dessert.
Let’s Get Started:
Apple Crisp No Bake Cheesecake Bars
Ingredients
For Crust:
- 1 pouch graham crackers about 9, crushed
- 1/2 cup brown sugar
- 6 tbsp butter melted
For Cheesecake layer:
- 16 oz cream cheese 2 blocks
- pinch of salt
- 1 tbsp vanilla extract
- 1/2 cup brown sugar
- 1 cup heavy whipping cream whipped until thick
For apple layer:
- 4 honey crisp apples peeled and chopped
- 1 tbsp cinnamon
- 1 tbsp lemon juice
- 1/4 cup sugar
- 1 tsp cornstarch
- 1 tbsp water
For Crisp Layer:
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/2 cup oats
- 6 tbsp butter cold, cubed
- pinch of salt
- 2 tsp cinnamon
Instructions
For Crust:
- In a medium sized bowl, add your crushed graham crackers, melted butter and brown sugar.
- Stir together until well combined and once your mixture stays together when you press it down, you are ready to transfer it into your baking dish.
- In a 9 by 13 inch baking dish lined with parchment paper, pour in your crust mixture and pack it down with a glass or the back of your measuring cup.
- Let chill in the freezer while making your other layers.
For Cheesecake Layer:
- In a large bowl, add your cream cheese, brown sugar, vanilla extract, and salt. Whip it up until its well combined.
- In a separate bowl whip up your heavy whipping cream until thick and fold it into your cream cheese mixture.
- Once your mixture is well combined and smooth, pour it onto your crust and spread out until even and smooth.
- Place in freezer while preparing other layers.
For Apple Layer:
- Cut up your 4-5 apples into cubes and place into a sauce pan over medium heat.
- Add your lemon juice, cinnamon and sugar and stir together. Let cook over medium heat until soft, stirring occasionally.
- Once your apples have softened a bit, mix together your cornstarch and water and add to your apple mixture. (Don't add the cornstarch without mixing it with the water as it would clump up and not mix in well.) This will thicken the mixture but you can add a couple tablespoons of water if its too thick.
- Let cool.
- Once your apple mixture has cooled, spread it on top of the cheesecake layer. Place back into your freezer to chill.
For Crisp Layer:
- In a small bowl, add your flour, oats, brown sugar, cinnamon, salt, and cold cubed butter. Using your hands or a pastry cutter combine all your ingredients together.
- On a baking sheet lined with parchment paper crumble your crisp mixture and bake at 375° for about 10-12 minutes or until it's spread out and golden brown.
- Remove from oven and let cool. Break into pieces and top your apple crisp cheesecakes bars.
- Cut into squares, share and enjoy.
Notes
A: You can store these in the fridge covered for about 3 days or up to 1-2 weeks covered in the freezer. Q: How should I store these?
A: You can store them in the freezer and let them thaw a little bit before serving or you can serve them cold from the refrigerator. Q: Do I have to add the crisp part? A: No, you don’t have to add the crisp part on these. They would be so good with just the apple part but the crisp adds a nice crunch. Â
