I partnered with Eggland’s Best for this recipe. I love using them for my holiday baking. It’s so important to me, to use better for you products in my recipes and they provide just that.

Eggland’s Best eggs are packed with nutrients, including 6x more vitamin D than ordinary eggs, as well as double the amount of Omega 3. They are also 25% less fat than ordinary eggs.

Gingerbread is such a well loved flavor during Christmas baking. It’s warm, cozy and such a nostalgic holiday flavor. I love making different desserts flavored as gingerbread. Here’s a list of all my favorites:

  • Gingerbread Cheesecake Stuffed Cookies
  • Cutout Gingerbread Cookies
  • Gingerbread Cookie Bars
  • Maple Gingerbread Cookies

What Should I Make these for?

This recipe would be perfect for so many things. You could make it for your holiday party, a cozy Christmas baking night in, or for your friends, neighbors and coworkers alike. This would also be such a fun date night to make with your loved one.

I love baking to share with my friends, family, and neighbors. Baking is something that’s so special to me, especially around the holidays. I hope this recipe brings joy to you and those you care about!

Baking during Christmas is something that is so special to me. I remember as a kid, getting so excited to decorate cookies in our kitchen. Especially Gingerbread Cookies!! We would get christmas sprinkles and chocolate chips, red hots and frosting. It truly was so fun and now as an adult, it’s so nostalgic.

Gingerbread definitely is one of those flavors that brings out the kid in all of us. I hope this Gingerbread Streusel Coffee Cake with Maple Glaze does that for you too. I hope the rich flavor of ginger, cinnamon and molasses takes you back and the fluffy yet dense consistency of this coffee cake makes your mouth water.

This Coffee cake recipe would go SO well with a cup of warm coffee (or iced coffee if you are like me) or a cozy cup of holiday tea. It has sixteen slices from an 9 by 9 inch pan making it super THICK and sharable.

  • 1/2 cup oil I used vegetable
  • 3/4 cup sour cream
  • 1/3 cup molasses
  • 3 Eggland's Best eggs
  • 3 cups flour all purpose
  • 2 tbsp cornstarch
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp all spice
  • 1/4 tsp ground cloves
  • 1 1/2 cup of milk
For Streusel:
  • dash of cinnamon
  • 1/4 cup butter one stick cold, cubed
  • 1/2 cup oats I used old fashioned
  • 1 cup brown sugar
  • 1 cup flour all purpose
For Glaze:
  • 2 cups powdered sugar
  • ¼ cup milk
  • 2 tsp pure maple syrup

Method

  1. In a large bowl, add your sugar, oil, vanilla extract molasses, and sour cream. Whisk until well combined.
  2. Add your Eggland's Best eggs one at a time, mixing in between each addition.
  3. In a medium bowl, stir together your dry ingredients, including your cinnamon, ginger, nutmeg, cloves, all spice, all purpose flour, cornstarch, baking soda, baking powder and salt.
  4. Add ⅓ of your dry ingredients into your mixture and mix until just combined. Add half your milk.
  5. Add an additional ⅓ of the dry Ingredients and mix and you second half of milk and mix.
  6. Lastly, add you last ⅓ of dry ingredients and mix until just combined, being careful to not over mix.
  7. Preheat your oven to 350°F
  8. For the cinnamon streusel, add your cold butter, oats, brown sugar, cinnamon and flour and use a fork, your hands or a pastry cutter to blend until it starts to come together. It’s ok if it’s crumbly.
  9. Add parchment paper to your 9 by 9 square baking dish and pour in half your batter. Take half your crumble mixture and crumble it on top of the batter.
  10. Add the rest of the batter on top.
  11. Crumble the rest of your crumble on top of your cake and bake in the oven at 350° for 45-55 minutes until a knife comes out clean. (If at 45 minutes, your cake is still sticky and wet, keep it in the oven for 5 minutes at a time checking until it’s done)
  12. To make the glaze, add your powdered sugar, pure maple syrup and milk and whisk until smooth.
  13. Once your cake has cooled, cut them into slices 4 by 4 and drizzle your glaze over the top.
  14. Share and enjoy!!
