Homemade Strawberry Poptarts

These homemade strawberry pop tarts are made up of a few elements. A homemade Pie Crust which is put together in no time, with just a handful of ingredients. Then the filling of course, which you can make homemade or use a premade jam and then to top it off a quick and easy icing to glaze over the top.

Poptarts made at home are so much better than the prepackaged ones but give that same fun nostalgic feeling. They are the best little pastries to make for any event and would be such a fun dessert to make for a summer cookout.

Homemade Poptarts are one of the most underrated desserts. They are so fun and easy to make but are so so cute and can be customized to any holiday or event. You can add different filling, icing or toppings like sprinkles.

This recipe is made up of 3 components: the crust, the filling and the glaze.

The homemade pie crust is SO easy to make (easy as pie) and comes out super flaky and crispy. Especially if you add an egg wash before baking. I also like sprinkling course sugar on pie crust desserts before baking adding the perfect texture.

These are filled with a fresh strawberry filling made with real strawberries. It’s a sweet and tangy filling that’s so fresh. Brightened with lemon juice, this filling is perfect for those warm summer months. It comes together on the stove in no time. It’s like summer in a bite.

The strawberry glaze tops these off amazingly, adding the perfect amount of sweetness and adding more texture as well. It’s made with just 3 ingredients: heavy cream (or milk), powdered sugar and some of the homemade strawberry filling that goes on the inside.

What You’ll Need:

  • flour
  • butter
  • sugar
  • salt
  • vinegar
  • ice water
  • fresh strawberries
  • lemon juice
  • cornstarch
  • eggs
  • powdered sugar
  • heavy whipping cream
  • parchment paper

All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.

Homemade Strawberry Poptarts

The best Homemade Strawberry Poptart Recipe!! Flaky Pie crust filled with homemade strawberry jam and topped with a simple strawberry glaze to top them off perfectly. They are an even better than the store-bought pop tarts you know and love while also giving that fun nostalgic feeling. These little pastries are the perfect little sweet treat.

Ingredients Method

Ingredients
  

For Poptarts:
  • 2 cups flour
  • 1 cup cold butter cubed
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1 tsp vinegar
  • 5-8 tbsp ice water
  • + flour for rolling
For Strawberry Filling:
  • 1 ½ cups fresh strawberries
  • ¼ cups sugar
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch
For Egg Wash:
  • 1 egg
  • 2 tbsp heavy whipping cream
For Glaze:
  • 1 cup powdered sugar
  • 2 tbsp heavy whipping cream
  • 1 spoonful of strawberry filling

Method
 

For Pie Crust:
  1. In a large bowl add your flour, sugar, salt, & cold cubed butter and using a pastry cutter or fork, combine it together. It will take a bit of mixing before it comes together. You can also use your hands to help break up butter.
  2. Once your mixture is combined and crumbly, add your vinegar and then your ice water 2 tbsps at a time mixing in between each one.
  3. When your dough comes together, form it into a disk and wrap in plastic wrap to chill for 30 minutes.
  4. Preheat oven to 375° F and line your baking sheets with parchment paper.
For Strawberry Filling:
  1. In a sauce pan over medium heat add your strawberries and sugar and start to mash them together and let cook.
  2. Mix your lemon juice and cornstarch together and add to your mixture to help thicken it. Keep cooking until it bubbles.
  3. Once your mixture has thickened, remove from heat and let cool.
  4. On a floured surface with a rolling pin, roll out your pie dough until ¼ inch thick. Cut into squares or rectangles.
  5. Place one of your dough squares onto a baking sheet lined with parchment paper and fill with a spoonful of your filling.
For Egg wash:
  1. In a small bowl add your egg and heavy whipping cream and whisk together until well combined.
  2. Brush the edges with egg wash and add another dough square on top. Continue with the rest.
  3. Using a fork, crimp the edges of each poptart and then poke four holes into the middle of each poptart
  4. Using a pastry brush, brush egg wash over your poptarts and place in the oven at 375° F until golden brown. Remove from oven.
For Glaze:
  1. In a bowl add your powdered sugar, heavy whipping cream and a spoonful of your strawberry filling and whisk until well combined.
  2. If glaze is too thick add more cream or a tsp of water. If it’s too thin, add more powdered sugar.
  3. Once your poptarts have cooled, use a spoon to spread the glaze over your poptarts.
  4. Share and Enjoy!!
